Enhancing colour and flavour in premium red wines - Extraction and Maceration

This premium red enzyme which works to increase colour stability (even after fermentation), aromatic extraction, increased body and mouth feel, and of course increases free-run volumes. Enhances soft tannin extraction without increasing astringency.

Extracts smooth tannins from skin and polysaccharides from pulp.

Minimises required maceration time by 30%.

Increase free-run post fermentation by 5-10%.

Addition rates – 30-50g/tonne

250g and 5kg pack sizes.
